Life Lately: Take One

Its official, we made it to Friday. Now I can spend the next two days getting everything done that I couldn't accomplish in the week. Just call me Pollyanna.

I'm hoping to do a little painting around the house, namely the kitchen, and get some cabinets organized in the bathroom. Contain your excitement. Every morning I have this tidal wave of hair products spill out from under my sink, and every morning it drives me nuts. Not anymore though. Organization here I come.

So what else has been going on? I tried cupcakes from a local bakery/candy store this past week. Holy decadent. I had two bites and achieved my sugar fill for the week. They were SO tasty though but you could easily split one between two people.

Every week I buy romaine lettuce and chop it up for salads to eat on during the week. It stores so well wrapped in a paper towel in a large ziplock bag and makes putting a salad together THAT much easier. This past week after I cut up my Romaine I noticed a little natures ombre. Pretty

I know you're dying for yet another garden update. Square feet markers have been put out - ie twine - and the zucchini and squash got planted. Then it proceeded to rain for 3 days straight making me a nervous Nelly. Water is great for gardens - to an extent - most plants don't like to get their feet wet (sit in water) so tooooo much rain can piss your plants off. Looks like everyone is still happy as a clam at the moment.

What else my friends? Anything new in your neck of the woods?

Alright, well I'm off to peruse the isles of target looking for organization tools but probably leaving with half the store instead.

Happy Weekend

High Protein Yogurt Parfait

As I approach 30 I have notice I cant quite eat like I am 21 any more. The sit down pull your jeans over your tummy pooch is a real thing, y'all. I can work out all the day is long but nachos and beer make it as though I haven't worked out in ages. Thus it was time to reign in the "but why cant I still be in college diet" and get this train on the tracks.

In the past I have been strict Paleo (amazing health benefits) and tried a simple clean eating diet also. To be honest, I really enjoyed both. The problem came when I hadn't prepared for the week or had lots of social gatherings - clean eating out the window.

I need something flexible and not too stringent or my anxiety levels go through the roof. So for the time being I've been trying to just count calories - after all it really is calories in vs calories out - and pack in the protein.

This yogurt has so much sweet flavor, thanks to the protein powder, and lots of staying power. Try it - you wont be disappointed and your waist line will thank you.

PLAIN greek yogurt - single serves are my bff
One scoop of protein powder - I use her natural whey in vanilla - so tasty
Sliced strawberries
1/3 cup your favorite granola

317 calories / 38g protein / 30g carbs / 5g fat

There are so many spins on this fast breakfast/snack - change up the fruit or the protein flavor... nuts and dried fruit instead of granola? Enjoy friends!

Dig this - Garden Update

I cant believe we are halfway through April already - weren't we just celebrating the new year? Lets be honest, wasn't I just graduating from college? Oh time, you beautiful and mean mean thing.

Moving on. Spring has officially sprung and my garden is getting some major attention lately. Crossing my fingers, but I think we have passed any threat of evening/early morning frost and I am taking the leap. Time to get some maters in the ground.

I seriously day dream about my garden. What should I plant? When? Spacing? Should I try square foot gardening or stick to my random plantings? My day dreaming has since turned into an obsession. A color coded excel drawing of my garden, obsession.

So what do I have in the pipeline? My hope is to get tomatoes, bell peppers, and hot peppers planted this weekend. Zucchini, squash, egg plant, beans, pollinators (i'm looking at you marigolds) and some herbs planted in the next few weeks.

After that all that will be left is getting the soil nice and warm for the cantaloupe and watermelon.

This is the first year I have also tried starting various plants from seed. Its like a 4th grade science experiment at my house and I'm loving it. They start to pop their little heads out of the dirt and I get all sorts of giddy.

Lord I need a life.

The sprouts you see are zucchini and squash with beans following soon and hopefully some eggplant. I also seeded some lettuce a few weeks ago and starting to see them gain some traction in the garden.

Oh! The potatoes are starting to surface in my buckets - give it a few more weeks and I'll be covering them up again!! I do have to say, it took them a solid 3-4 weeks to show any foliage and I actually thought I might have lost them all. If you're in the same boat give it some time - and make sure they are getting optimal drainage.

Lots of work ahead but the exciting part is reaping what you sow. Ah. So excited! Happy Weekend Lovelies.

Well hey there! Its been a few days, eh?

I was away at Big Cedar Lodge last week for work and then my parents were in town this past weekend to see this handsome babe, so its been a bit busy if I must say!

In other happenings, I got to spend a gorgeous Saturday morning with a this sweet family!

They seriously hit the jackpot on cute girls! Ellarie is one of the smartest little girls I have ever met, and then you have sweet Everleigh who is the happiest squishiest little thing, and Emelia and that gummy smile. Melt me!
